| Easy Crowd Pleasing Cowboy Chili |
This is a great meal for family gathering or sports themed parties. It is an easy one pot meal that can fill up the biggest appetites.
2 T. Olive Oil 1 Large Onion-finely diced 2 Cloves Garlic finely minced, crushed or pressed 2 Stalks Celery-sliced 1 12 oz package of Pork Chorizo 1 Lbs. Lean Ground Beef 2 Large Carrots-diced 1 12 oz can of Pinto Beans 1 12 oz can of Kidney Beans 1 12 oz can of Black Beans 1 12 oz can of Sweet Corn Kernels-Drained Salt and Pepper to taste. Additional water as necessary
In a large saute pan heat olive oil and carmelize onions. Add celery and saute until soft (sweat). Brown chorizo and ground beef together. You can choose to de-fat the meat mixture. Add the remaining ingredients to the browned meat mixture. You will add the liquid from the beans, but drain the liquid from the corn. Salt and pepper to taste.
Add enough water to cover all of the ingredients and bring to a boil. Reduce heat and simmer for 90 minutes. The longer the pot is left to simmer the better the flavors will marry. I like it to simmer about four hours and add water as needed.
Garnish with: Grated Cheese, Chopped Cilantro, Diced Onions, Sour Cream
Serve with: Cornbread and a green salad.
